Coconut Cake!

Last night, I was seriously craving a decadent coconut dessert. And because I'm 35 weeks pregnant (tomorrow!), I've been giving in to these ridiculous cravings. I suppose I always have, who am I kidding.

So, around 9pm last night, I found myself frosting this double decker scrumptiousness in between breaks from Project Runway...

If you're a coconut fanatic, like myself, this is another Barefoot Contessa recipe worth trying. And it just looks so pretty in my cake stand :)
